Copycat Orange Julius




Ingredients:
6 ounces frozen orange juice concentrate
1 cup milk
1 cup water
1⁄4 cup sugar
1-2 tsp. vanilla
6 regular-sized ice cubes (or until desired consistency)
Instructions:

1. Combine all of the ingredients in a high-speed blender, and blend until completely smooth.
2. Add ice cubes to blender, one at a time, blending after each one until smooth.
Adjust the flavor to taste, if necessary, and serve immediately. ENJOY!

4-Ingredient Coconut Macaroons




Chocolate Dipped Coconut Macaroons have got to be my all time favorite cookie... the coconut, the chocolate, the chewiness, the yumminess!!!!! FINALLY a true recipe and to think all it took was some sweetened condensed milk lol :)

Ingredients


Yield:  
20 to 22 cookies

14 ozs sweetened shredded coconut
14 ozs sweetened condensed milk
1 tsp pure almond extract
2 large egg whites, at room temperature
1/4 tsp salt
1 cup of semi-sweet chocolate chips (for drizzle)

Directions

Preheat the oven to 325 degrees F. Line baking sheet with parchment paper and dust with flour (this will help the cookies from sticking). Use the upper level of the oven to help toast the coconut while baking also.

Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown.

 Let Cool beffore adding chocolate drizzle.

For the chocolate drizzle, pour 1 cup semi-sweet chocolate chips in a microwaveable bowl.  Microwave on high for 1 minute or until chocolate is smooth enough to stir.  Then drizzle on top of coconut macaroons.


Coconut macaroons are traditional Passover sweets as they contain no flour.

Yaki Mandu



This recipe comes from a very good friend of mine
and we loved making them when our children were small. 
They're fast and easy and can be frozen {uncooked } 
on a cookie sheet individually,
then bagged for quick appetizers later on.

Yaki-Mandu 
Yaki Mandu is a Korean dumpling that can be steamed or fried. They look a lot like Chinese pot-stickers. Yaki means fried in Japanese and Mandu means dumpling in Korean.

Ingredients: 
    1 lb. raw ground beef
    1/2 teaspoon sesame seed
    1 green onion, shredded finely
    3 teaspoons soy sauce
    Dash Garlic Powder or Garlic Salt
    4 ounces cellophane noodles,
    {soaked in water for 10 minutes and cut into 2-inch pieces}
    1 package (1-lb. size) wontons {egg roll wraps}
    4 cups vegetable oil for frying


--SWEET AND SOUR SAUCE--
    1 cup sugar
    1/2 cup vinegar
    1/2 cup water
    3 tablespoons ketchup
    1 tablespoon cornstarch


Directions: 

Mix raw hamburger, sesame seeds, garlic powder/salt, green onion and soy sauce in a large bowl. 
Add drained cellophane noodles.
Stir the filling together, incorporating the hamburger mixture and noodles well. 

Prepare egg roll wrapping area: set out the wrappers and the pan of filling, a plate for the finished wraps, a small bowl of water, allowing some room for wrapping. 

Now for the fun: Scoop about 2 tablespoons of the filling onto one of the wrappers. Place it in the middle horizontally. Then fold in the left and right sides of the wrapper, folding the bottom up and over. Finish by rolling the entire roll up onto the top flap, dabbing a bit of water onto the edge to hold it shut (like an envelope). Place the completed roll on a clean plate and repeat. Keep rolling until all filling and wrappers are used. 

While wrapping: Heat oil to 375 F in a deep fryer. 

Note: If using a large, heavy skillet (you'll want at least 1-inch of oil). Place each completed roll in the hot oil carefully, frying until golden brown (about 1 to 2 minutes). Flip to the other side and fry for another minute. Remove and drain on a paper towel. Serve warm or at room temperature with your favorite dipping sauces.

Pecan Pie

Note: For a richer darker sweeter taste...
 I perfer the dark corn syrup and also used Mrs. Smith's Deep Dish Frozen Pie Shell..

Ingredients
    1 cup dark brown sugar
    2/3 cup white corn syrup
    1/4 cup unsalted butter
    3 tablespoons bourbon
    1/2 teaspoon vanilla
    1/2 teaspoon salt
    4 eggs
    3 tablespoons half-and-half [ *do not substitute]
    2 cups pecan pieces
    1 unbaked 9 inch pie crust
    whole pecan halves

Preheat oven to 350 degrees.
In a large saucepan, melt the brown sugar, syrup and butter together with the bourbon, vanilla and salt.
Continue heating the mixture to the boiling point, stirring frequently.
Boil for 1 minute, stirring constantly.
Remove pan from heat and let mixture cool.
In a bowl, beat the eggs with the half-and-half until they are light and frothy.
Add to the cooled syrup, beating until the mixture is well incorporated.
Stir in the pecan pieces.
Pour the filling into the pie shell.
Top with a layer of pecan halves.
Bake 45 to 50 minutes until a toothpick inserted into the center comes out clean.

TACO BELL Tacos-Seasoning



(Makes 6 Servings)

COPYCAT RECIPE FOR TACO BELL TACOS


Ingredients:

1 1/3 lbs. lean ground beef
1 ½ tablespoons masa corn flour
4 ½ teaspoons chili powder
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon seasoning salt
½ teaspoon paprika
¼ teaspoon cumin
½ teaspoon garlic salt
¼ teaspoon sugar
1 teaspoon instant minced onion
½ teaspoon beef bouillon
12 taco shells
1 cup shredded cheddar cheese
½ head shredded lettuce


Step 1: Preheat the oven to 350 degrees. In a small bowl combine masa corn flour, chili powder, onion powder, garlic powder, seasoning salt, paprika, cumin, garlic salt, sugar, minced onion and beef bouillon. Mix well and set aside.

Step 2: Heat a large skillet over medium-high heat. Crumble the ground chuck into the skillet and cook while breaking the meat up into chunks with a spatula until browned. Drain off any excess grease. Add 3/4-1 cup of water and the taco seasoning to the ground beef. Mix well and simmer on medium-low heat for 20 minutes. Simmer until almost all of the moisture has cooked away.

Step 3: Refresh the taco shells by placing them into a baking dish. Place the baking dish into the oven and bake at 350 degrees for 7-10 minutes. Allow the shells to cool off a little bit before assembling the tacos.

Step 4: To assemble the tacos—add a couple of tablespoons of the taco meat to the bottom of the tacos shells. Top with lettuce and cheese.



{ Taco Bell } Seasoning Recipe
Ingredients
  • 2½ tablespoons chili powder
  • 1½ tablespoons paprika
  • 2 tablespoons cumin, we love cumin- feel free to adjust to your taste
  • 2 teaspoons oregano, preferably Mexican oregano
  • 1 tablespoon garlic powder
  • 1½ tablespoons onion flakes (minced dried onion) or 1½ tablespoons onion powder
  • ½ teaspoon cayenne pepper, omit if you like it mild and increase if you like it spicier
  • 1 teaspoon salt, adjust for your taste the salt helps to keep it fresh when storing

Instructions
  1. Mix all spices together.
  2. Store in airtight container and it will keep for 6 months to a year.
  3. teaspoons of this spice mix is the equivalent of one 1.25 oz packet of store bought taco seasoning.
  4. This recipe makes the equivalent of 4 spice packets.

Tropical Fruit Salad


35 mins to prepare, serves 12

Ingredients::

1 box instant Lemon Pudding mix, dry
1 16 oz carton Cool Whip
1 can Dole Tropical Fruit Cocktail, drained
1 can Pineapple tidbits
1 Maraschino Cherries, drained
2 cups Mini Marshmallows

Directions::

1 - Mix the dry pudding mix with the Cool Whip. Set Aside.
2 - In a large bowl, Stir together the pineapple, cherries, tropical fruit, and marshmellows.
3 - Fold together the cool whip mixture and the fruit mixture gently.
4 - Refridgerate at least 30 minutes and Enjoy

Mama's Ambrosia Salad




Dump 6 ingredients together and you have a delicious Fruit Cocktail Salad. Maybe even add some maraschino cherries if you have them on hand,

Always a  quick and refreshing summertime salad. 
Hey! You could even say it's a healthy one at that with the cottage cheese and fruit in it right??? or we can tell ourselves that while indulging in this this glorious salad/dessert  *wink

:: Ingredients ::

1 pkg prepared Jello {any flavor}
1 (15 oz.) can fruit cocktail {drained}
1 (11 ounce) can Mandarin orange sections
1 (32 oz.) tub low-fat small curd cottage cheese
 3 c. mini marshmallows {about 1/2 a bag}
8 oz. container Cool Whip

:: Directions ::
1- Drain fruit cocktail but KEEP juices for jello mix, 
1- Drain mandarin oranges but do not keep juices this time. 
prepare the jello as normal using the juice as part of the cold liquid.
2- Add in fruit cocktail to the jello and Refridgerate Jello til set, stirring occasionally so it is kinda lumpy.
3- Meanwhile when Jello is almost set.... Add cottage cheese, marshmallows, and Cool Whip in a bowl. Stir gently until well combined... Fold into Jello mixture.
4- Refrigerate for at least four hours, or until marshmallows are soft, before serving.

Note: Marshmallows will absorb the moisture the longer it sits so you may want to add more cool whip art serving time.

Welcome to my start-up page ... this should be interesting as I have never done a foodie blog before ... but since I will be moving out of my home after 10 yrs and into a small one bedroom apartment after a work injury... I am finding I have lots to get rid of in the house :).
