Baking Tips



Cakes


  • The main reason cakes become dry is they are over-baked. As a rule, check the cake at the shorter end of the baking time range. If your cake doesn't test done with a toothpick, return it to the oven for the full baking time.
  • Hand stirred batter makes for a very moist cake vs. the mixer.


  • Pie Crust


  • Use Frozen or Chilled Pie CrustPie crusts that are chilled or frozen work best. It prevents overcooking.


  • Cookies


  • To make sure cookies stay fresh and soft, the next day place one slice of bread in the cookie jar, Tear the slice in halves and put one half on the bottom and one on the top.

  • Macaroon Cookie Tip:
    Using your fingers, form cookies into loose hay stacks. Moisten fingers with water to prevent sticking.
    Should the macaroon cookies harden on the pan, return the cookie sheet to the warm oven for a minute before trying to remove them.
