Patriotic Cake Mix Cookies

Ingredients

  • 1 Box of White Cake Mix
  • 1/3 Cup Oil
  • 2 Eggs
  • Red & Blue gel food color - several drops each

Instructions

  1. Preheat oven to 350 degrees
  2. Line baking sheet with silicone mat or parchment paper
  3. Combine cake mix, oil & eggs to a large mixing bowl & mix with a large, firm spatula
  4. Divide dough into 3 equal parts & place in separate bowls
  5. Add several drops of red food color to one bowl & mix into the dough until you have a smooth, even color
  6. Repeat with the blue
  7. Scoop out onto your prepared baking sheet & press the tops of each ball of dough with the bottom of a glass to flatten slightly
  8. Bake 7-9 minutes & allow to cool on baking sheet several minutes before transferring to a wire rack to cool completely.

Patriotic Snack Mix

This Patriotic Trail Snack Mix is sprinkled with red, white and blue and a perfect treat for any patriotic holiday like Fourth of July, Memorial Day or Veteran's Day!


Note:  Do not over fill your mixing bowl, you will need room to toss the ingredients together.

INGREDIENTS

3 cup Corn Chex™ cereal
1 cup red Licorice bites

1 cup M&Ms red, white and blue

1 cup mini marshmallows

4 cubes vanilla candy coating



INSTRUCTIONS

- In a large roasting pan, or large casserole dish, mix all ingredients except the M&M's, sprinkles, and candy melts.
- Melt candy coating on low heat in a small pot. Stir constantly and melt until smooth.
- Pour over Chex and mix until cereal is all coated. Pour onto wax paper and spread out. Let set.
- Once cereal is set, add other candy pieces and mix well.Store snack mix in an airtight bag or container.
- Snack mix with popcorn in it will remain fresh tasting about 2-3 days, and a bit longer without popcorn.

BEST Buttercream Frosting

  1. This recipe yields about 4 1/2 cups of frosting.  I’ve made this recipe more times than I can count so I know it does work - even if 3 lbs. powdered sugar sounds liek alot!

INGREDIENTS

  • 1 cup salted butter (2 sticks), at room temperature
  • 1/2 cup Crisco* shortening (just under 4 oz. on a kitchen scale)
  • 8 oz. cream cheese, at room temperature
  • 3 lbs powdered sugar
  • 1 Tablespoon of vanilla extract
  • 24Tablespoons of milk (add to get consistency to pipe or spread)

INSTRUCTIONS

  1. First, cream the butter and Crisco in a mixing bowl. Mix on low speed for a couple of minutes until smooth and creamy. Add in the vanilla and cream cheese and mix again until very smooth. Gradually add the powdered sugar until it’s all combined. It will be very stiff! Then begin adding milk until you reach the desired consistency for decorating (2-3 tablespoons works well for me!)
  2. *I am generally satisfied using generic ingredients, but I’ve found that Crisco shortening has a much better texture and seems to make smoother, yummier icing than when I make it with generic.

5 cups powdered sugar
1 teaspoon vanilla
3-4 tablespoons milk

NO PEANUT BUTTER VERSION OF THIS BAR.

Ingredients
  • 1/2 lb butter
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 24 large marshmallows or 12 jumbo marshmallows
  • 1 teaspoon vanilla
  • 4-5 cups Special K cereal
Directions
1. Combine butter, white sugar, brown sugar and marshmallows in a medium pot.
2. Cook over medium heat, stirring occasionally, until all the ingredients are well combined.
3. Add the vanilla and cereal to the pot and stir to combine.
4. Pour onto a cookie sheet to cool. After the candy reaches room temperature, break into pieces.

The *Original* WASC Cake Recipe

Adapted From @kakeladi: CakeCentral and Baking-a-Moment with Allie
WASC stands for White Almond Sour Cream. 
The WASC recipe was based on box mixes being 18.2 oz.  Yeilds 7 Cups Batter Approximately

Ingredients

  • 1 box cake mix (I prefer Betty Crocker)
  • 1 cup flour
  • 1 cup granulated sugar
  • generous dash of salt
  • 1 cup sour cream*
  • 1 cup water *
  • 3 whole eggs
  • 1 tablespoon flavoring*

Instructions

  1. In bowl mix together dry ingredients. It’s helpful to use a wire whisk; important w/choco cake not so much for other flavors.
  2. In mixer bowl place next 4 ingredients. Add about 1/2 of the dry ingredients and blend together, then add the rest of the dry ingredients & blend. Mix for 2 minutes.
  3. Pour into prepared pans * and bake as usual.

NOTES: *ANY* cake flavor can be used. Some tell me they just dump all ingredients into the bowl together others say they sift all dry ingredients together. 

*** A “Part” is any measure be it teaspoon; tablespoon; cup or quart - Since I made many wedding cakes I usually mixed it up by the cup:)





  • Match the flavoring to the cake flavor such use lemon/almond mix for lemon cake; strawberry for a strawberry cake etc, etc. For most flavors you can use a mixture of vanilla, butter, and almond which is what I do most of the time.
  • You can use milk, juice, thawed frozen concentrates, soda pop (ie: Coke) cream or just about anything wet for the liquid.
  • *NOTES: This recipe is based on mixing in a kitchenaid mixer. I use position #1 to stir it, then #4 to mix the batter.
  • This makes the amount of batter as if you used 1 1/2 mixes and is perfect for a 10″ sq or 9×13 or one 8″ & two 6″ round; or two 8″rounds or a 12″ round; and other combinations of pans.

  • I prefer to bake at 300 degrees for about 20-30 minutes (depending on size of cake) then turn oven up to 325 for about an equal time. If cake has pulled away from sides it is overbaked. After cooling, the top might be a bit sticky.

    Original Flavoring Added:

      1 part vanilla extract
      1/2 part butter flavoring
      1/4 part almond flavoring

    Pillsbury Lemon Cake Mix.

      1 teaspoon vanilla
      1 Tablespoon lemon

    Orange Version

    Instead of water, try using orange juice and 1/2 pack of orange jello.

    Marble Version

    Instead of 1 cup of water I tried 1 cup of liquid creamer and Duncan Hines Fudge Marble cake mix.

    • 2 boxes white cake mix

    • 1 box Jello white chocolate pudding mix (3.3 oz)

    • 2 cups sour cream 
    • 4 Tablespoon oil 
    • 1 cup International Delight white chocolate coffee creamer 
    • 2 cup water 
    • 2 teaspoon chocolate flavoring syrup 
    Another changed up recipe issubstituting with Vanilla pudding, Sweet Italian Coffee Mate, and Pure Vanilla Extract.

    Three-Ounce Cake Mix ‘Upsizer’

    Duncan Hines, Pillsbury and Betty Crocker, reduced their cake mix package size. New cake mixes are 15.25 ounces compared to their previous size of 18.25  
      The recipe provided can be used for yellow or white cake mixes. For chocolate mixes, substitute 25 percent of the flour with cocoa powder. Store the cake mix add-in in a mason jar to have on hand as needed. The liquid ingredients for the mixes remain the same.

    Three-Ounce Cake Mix ‘Upsizer’
    1 1/2 cups all-purpose flour
    1 cup sugar
    2 teaspoons baking powder
    1/4 teaspoon baking soda
    Whisk all dry ingredients together and store in a clean mason jar. When you wish to increase a 15.25 ounce cake mix to 18.25 ounces, add three ounces of this mix (6 tablespoons) to your existing cake mix.
    Makes about 6 portions.

    When Baking with Butter:
    Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

    When Mixing Cake Batter:
    You cannot over beat the eggs, sugar and butter, but you can over beat the flour. If you do, gluten will form and you will be making a quick bread instead of layer cake. Beat the flour just until there are no visible signs of dry flour, but not until the batter is completely smooth.

    Cake Flour:
    Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.

    Substitute Cake Mix


    MAIN INGREDIENTS


      3 1/3 Cups Solid Vegetable Shortening
      5 Tablespoons Double Acting Baking Powder
      7 2/3 Cups Sugar
      3 Tablespoons Salt
      11 Cups Sifted Flour

    DIRECTIONS


    In very large bowl, combine flour, salt, sugar and baking powder, mix well to blend. Cut in the shortening with two knives or a pastry blender until the mixture looks like cornmeal and shortening is evenly distributed. 



    Divide the cake mix into six equal portions (about 3-1/2 cups each). Place each portion into a quart glass jar or heavy duty zip lock plastic bags. 



    Next time you need a cake mix, you will have plenty on hand. 



    Cover tightly and store in a cool, dark place for up to a month, or in the freezer for up to 3 months. Substitute this recipe for any box cake mix, each portion of cake mix will make two 8" cakes or one 13 x 9" cake.



    Cake Made From Substitute Cake Mix


    Yellow Cake

    3 1/2 Cups Substitute Cake Mix
    1 tsp Vanilla
    2 Eggs
    3/4 Cup Milk

    White Cake

    Use 3 medium egg whites in place of 2 whole eggs.
    Do not beat whites separately, just add them to the mix along with the milk and vanilla.

    Spice Cake

    Add to the dry ingredients:
    1 tsp Ground Cinnamon
    1/2 tsp Allspice
    1/4 tsp Cloves

    Chocolate Cake

    Add to the batter after initial blending:
    2 Tb Milk
    2 Squares Unsweetened Chocolate, Melted


    DIRECTIONS PART 2

    Oven Temp :: 350°   

    Baking Time :: 30 - 40 minutes
    Pan Type :: two 8 inch or one 9 x 13 pan

    Preheat oven, grease and flour cake pans, then set aside. Pour one portion of the cake mix into a large bowl.
    Make a well in center of mix and add eggs, vanilla and milk.
    Beat mixture 1 minute with electric mixer at low speed until blended.
    Scrape sides and bottom of bowl and beat 2 minutes longer at medium speed until batter is smooth.
    Pour into prepared pans and bake until cake springs back when pressed lightly in center and begins to pull away from edges of pan.

    How to Boil Eggs that Peel Easy

    Note: The vinegar in the water begins to break down the eggs shell during the boiling process, making the eggs easier to peel. The salt helps by loosening the shell through permeation, and shocking the eggs with an ice bath causes them to immediately stop cooking, which also makes them easier to peel.

    Method

    1. Fill a large pot with enough water for the desired number of eggs to be fully submerged by at least an inch.
    2. Add 1/4 cup of vinegar to the pot, and then place on med-high heat.
    3. Bring the vinegar-water to a rolling boil.
    4. At this time add 1 tablespoon of salt to the pot and stir until dissolved.
    5.Then, slowly and carefully lower the desired amount of eggs into the boiling water.
    6. You may have an egg or two crack due to the rapid change in temperature, but it is worth it for the easy-peel of the shells. 7. Reduce the heat to low, boiling the eggs on a simmer for 12-15 minutes, depending on how well done you like your eggs.


    8. Once cooked to the desired wellness remove the eggs from the stove and quickly place them into an ice bath, ensuring that they are fully submerged.
    9. Once the eggs are cold the shells will slide right off!

    Retro Banana Layer Cake

    Gramma's Banana Cake to die for .. but first some
    Important Tips
    1- The fruit should be ripe and spotted but not pure black (black is better for banana bread).
    2- We want some speckles to show through in the cake but we don’t want a dark brown cake.
    3- You can make this cake with regular unripe bananas, although the bananas will have to be mashed well and I would add a tablespoon of honey, noting that the cake will have a slightly different texture and the color will be a little different.
    4- Whatever fruit shows in the mashed lumps will show in the cake for the most part (so we want some tiny fruit morsels in the cake but not large white lumps of the banana).

    Ingredients for Banana Layer Cake:
    2 large eggs
    1 cup mashed ripe bananas (3 or 4 large ripe bananas) 2-1/2 cups cake flour
    2-1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup unsalted butter
    1 cup granulated sugar
    1 teaspoon vanilla extract, fine quality
    1/4 cup of buttermilk (or 1/4 cup milk with 1/2 teaspoon of white vinegar)


    Directions for Banana Layer Cake:
    1. Pre-heat oven to 375 degrees
    2. Prepare two round 9″ cake pans by buttering them and lining the bottoms with parchment.
    3. Mash 3 or 4 large bananas to produce 1 cup hand-mashed banana puree
    4. Measure out into a large bowl all 4 of the dry ingredients. Whisk all ingredients until thorough blended.
    5. In a seperate small dish, Using the mixer, beat the sugar and butter on high for about 3 minutes until light and creamy.
    6. Beat 2 large eggs by hand/fork in a cup and Beat into the batter on medium speed until fully incorporated. Add Vnilla flavoring next.
    7. Place the prepared mashed bananas in a bowl and, using a fork, stir in the sour milk (or buttermilk) until thoroughly blended.
    8. Add the banana-sour milk (or buttermilk) mixture and the prepared flour mixture in partial batches to the batter and blend with the electric blender on low-speed until just incorporated, about 30 seconds.
    9. Bake the banana cakes at 375 degrees for approximately 20-25 minutes until the tops are golden brown.


    Fresh Banana Frosting Ingredients:
    1/2 cup Mashed Bananas from about 1 large ripe banana
    16 ounces (1 pound, about 3-3/4 cups, usually 1 box) Powdered Sugar
    1/4 cup (1/2 cube) Unsalted Butter
    4 ounces (1/2 cup, usually half of large foil package) Cream Cheese
    1 teaspoon Vanilla Extract, fine quality
    2 or 3 large bananas (not overly ripe, for slicing between the layers)

    Directions:

    1. Mash a large banana well with a fork, remembering that every little chunk of fruit will show in the final frosting but hoping for some tiny bits to prove it up as the real deal.
    2. Add the room temp butter and banana puree to the powdered sugar in the mixing bowl.
    3. Fold in some vanilla Flavoring.
    4. Microwave the cream cheese a few seconds to take the chill off, chunk it up and add to the mixing bowl of ingredients
    5. Blend everything together with mixer til it shows a 'sheen'

    Ingredients

    Cake

    • 1 (15.25 ounce) box Duncan Hines Chocolate cake mix
    • 1 (3.9 ounce) box instant chocolate pudding
    • 1 (16 ounce) container sour cream
    • 3 eggs
    • 1/3 cup vegetable oil
    • 1/2 cup water
    • 2 cups semi-sweet chocolate chips

    Frosting

    • 1/4 cup butter, room temperature
    • 1/4 cup unsweetened cocoa powder
    • 2 cups powdered sugar
    • 1 teaspoon vanilla
    • 1/4 cup heavy cream

    Instructions

    Cake

    1. Preheat oven to 350°F. Liberally grease a 10- inch bundt pan with butter or shortening and lightly dust with flour. Set aside.
    2. Combine all the cake ingredients in a large mixing bowl. Mix on low for 30 seconds until combined and then on medium speed until smooth, about 1 minute. Fold in the chocolate chips and pour the batter into the prepared pan.
    3. Bake for 55-60 minutes, until the cake is set. Allow the cake to cool in the pan for 10 minutes and then invert the pan onto a cake plate. Cool completely before frosting.

    Frosting

    1. In the bowl of your stand mixer fitted with the paddle attachment on low speed beat the butter, cocoa powder and powdered sugar until combined. Add in the vanilla and cream and beat on medium speed for 1-2 minutes until creamy, scraping the sides of the bowl as necessary.
    2. Frost the top of the cake and garnish with more chocolate chips if desired.
