Banana Pudding Lasagna


INGREDIENTS

FOR THE CRUST
    1 1/2 c. finely crushed Nilla Wafers
    4 tbsp. melted butter
    Pinch kosher salt
FOR THE CHEESECAKE
    2 (8-oz.) blocks cream cheese, softened
    3/4 c. granulated sugar
    2 c. heavy cream
    1 tsp. pure vanilla extract
    1 (3.4-oz.) package instant vanilla pudding mix
    1 3/4 c. whole milk
    5 large ripe bananas, sliced
    48 Nilla wafer, plus more, crushed, for garnish

DIRECTIONS
Step #1 - Make crust: In a medium bowl, stir together Nilla wafers, butter, and salt. Press into the bottom of a small rectangular baking dish. Set aside.
Step #2 - Make cheesecake filling: In a large bowl, beat cream cheese and sugar until fluffy. Beat in heavy cream and vanilla and until stiff peaks form. Set aside.
Step #3 - In a medium bowl, whisk together pudding mix and milk. Let pudding stand for 5 minutes until thickened. Fold pudding into cheesecake mixture.
Step #4 - Pour half the filling into graham cracker crust. Add a layer of sliced bananas and Nilla Wafers, then pour remaining half of filling over top. Add another layer of sliced bananas and Nilla wafers. Refrigerate until cool and set, at least 2 hours and up to overnight covered.
Step #5 - Top lasagna with cool whip, sprinkle with nilla wafers and top with remaining banana slices. Slice and serve.

Cherry Winks Cornflake Cookies
Serves: 5.5 dozen cookies

Ingredients

    2¼ cups sifted all-purpose flour
    1 tsp baking powder
    ½ tsp baking soda
    ½ tsp salt
    ¾ cup salted butter
    1 cup granulated sugar
    2 eggs
    2 TBS milk
    1 tsp vanilla extract
    1 cup finely-chopped pecans
    1 cup finely-chopped dates (qptional)
    ⅓ cup finely-chopped maraschino cherries
    2½ cups cornflakes, crushed
    5-18 maraschino cherries, cut into quarters

Instructions

1. Preheat oven to 375F

2. Sift together flour, baking powder, soda, and salt.

3. In a second bowl, cream the butter and sugar. Add the eggs one at a time, mixing after each one. Stir in the milk and vanilla, and then add the dry ingredients with the pecans, dates, and chopped cherries. Mix well.

4. Using a level tablespoon or slightly mounded small cookie scoop, shape dough into balls, roll in crushed cornflakes, and place onto greased cookie sheets about 2 inches apart.

5. Bake 11-12 minutes or until browned.

Cloud Bread aka Keto Bread



Recipe for this fluffy "bread" is

 3 Eggs separated
1 tsp of baking powder
3TBSP cream cheese

Place egg WHITES into mixing bowl and add the baking powder. Turn mixer on to beat egg whites to firm peak.
In another bowl whip egg YOLKS with a wire wisp. Add 2 ounces of cream cheese and mix well with the egg yolks.
Once the egg whites are stiff and the egg yolk mixture is mixed well, carefully fold egg yolk mixture into egg whites.

You want the mixture to stay fluffy and full of air.
Spoon individual piles onto cookie sheet with parchment paper or silicone sheets on them.
Bake at 325 degrees F for 20-30 minutes depending on your oven and how brown you want them. The vanilla and sugar are optional.

If you want to use them as taco shells put Mexican seasoning in the batter. For Pizza crust put Italian seasoning in the batter. Work great for hamburger buns. Let your imagination go wild.

Once the bread is cool, place in airtight container. (May be zip-lock bag.). Let set for at least 5 hours or overnight. This causes the chewy texture to become more like bread. You can toast it when you pull it out to use it and it is delicious.

    1 cup all-purpose flour, spooned into measuring cup and leveled-off
    1/4 cup dark brown sugar
    2 teaspoons cornstarch
    1/4 teaspoon salt
    1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes
    1 tablespoon ice water
    1 large egg yolk

FOR THE CARAMEL LAYER
    1 (14-oz) can sweetened condensed milk
    1/2 cup dark brown sugar
    6 tablespoons unsalted butter
    2 tablespoons golden syrup (such as Lyle's Golden Syrup) or dark corn syrup
    1 teaspoon vanilla extract
    Generous pinch salt


FOR THE CHOCOLATE LAYER

5 SECRETS TO MAKING HOMEMADE ICE CREAM



  • The cream you must use is a high fat whipping cream such as a heavy whipping cream. It will double in volume and hold stiff peaks.
  • Using an electric mixer fitted with a whisk attachment, whip the COLD cream on medium/high speed until SOFT PEAKS form, roughly 3 minutes.
  • Cold sweetened condensed milk is a key ingredients and can’t be substituted. It makes the ice-cream softer and scoopable.
  • Once you add the condensed milk, speed whip the mix to STIFF PEAKS. Which means they will hold their shape and will be firmer than before. IMPORTANT - Take care not to over whip at this stage or your cream will curdle.
  • Add in a little vanilla extract or other flavorings. The alcohol in the extract will lower the freezing point making your ice-cream a little softer and easier to scoop.

    The 1947/1948 recipe for “Old Style Peach Cobbler”
    Ingredients
    • 2 1/2 cups sliced canned cling peaches
    • 3/4 cup canned cling peach syrup
    • 1/4 cup brown sugar (packed)
    • 1 1/2 tbsp. cornstarch
    • Few grains salt
    Dough
    • 1 tbsp. granulated sugar
    • 1/8 tsp. baking soda
    • 1 cup prepared biscuit mix (or your own biscuit recipe)
    • 1/3 cup cultured sour cream
    • 2 to 3 tbsp. milk (if needed)
    • Sweet or sour cream for topping
    Directions
    Place peaches in bottom of a 1-quart casserole. Mix peach syrup, brown sugar, cornstarch and salt. Pour over peaches. Set casserole in hot oven (425˚) while mixing dough. Stir sugar and soda into biscuit mix. Add cream and milk to make soft dough; mix lightly. Place by spoonfuls on top of hot peaches. Bake 30 to 35 minutes until well browned. Serve warm with sweet or sour cream. Serves 6 to 8.
