Sweet orange candies, coconut and oats come together in this chewy and nostalgic treat. You will cream together your sugars and butter and then add your dry ingredients. After that, you will fold in your coconut flakes, oats and orange slice bits.
INGREDIENTS
- 1 lb. Orange Candy Slices (diced - 2 cups aprox.)
- 1-1/2 cups packed Brown Sugar
- 1/2 cup Shortening
- 1/2 tsp. Salt
- 2 large Eggs, room temperature
- 1 teaspoon Vanilla Extract
- 2 cups all-purpose Flour, (divided - see step #2)
- 1 tsp. Baking Soda
- 1/2 cup Flaked Coconut
- 1 cup Quick Oatmeal
DIRECTIONS
- In a large mixing bowl, use a hand mixer to cream together Brown Sugar and Shortening and Salt. Add in Eggs, (one at a time, beating well after each addition) and Extract; set aside.
- In a seperate bowl, Sift together 1 1/2 cups *Flour, Baking Soda; set aside.
- Fold togeyther into cookie dough your creamed ingredients and dry ingredients together til smooth.
- Add diced Orange Candy Slices -w- Flour mixture, Oatmeal and Coconut Flakes. Mix together with your hands if desired.
- Chill Dough (15 mins-1/2 hour)
- Preheat oven at 325°-350°
- Roll into the size of a 1" walnut/golfball to form solid cookie dough ball. Place 2 in. apart on ungreased baking sheet lined with parchment paper as cookie will spread.
- Bake in the preheated oven for 10 to 12 minutes or until golden brown edges.
NOTES - ** Prep Candies: Cut each orange slice into 8 pieces. Roll pieces in 1/2 cup Flour; set aside. NOTE: *** To easily cut the orange candy slices, use scissors, rinsing the blades with cold water occasionally to reduce sticking.
- ** To keep the cookie together while baking you MUST chill dough and form tight 1" balls rolled into the size of a golfball/walnut.
- ** For softer chewy cookies bake at 325° for crispier cookie crunch bake at 350°
NOTE: This dough can be made in advance and stored in an airtight container in the freezer for 3 to 4 months. When you are ready to make the cookies, simply thaw the dough and follow baking instructions.
