Scrumptious Pumpkin Bread from Amy Roloff's first cookbook, "Short & Simple." Makes approximately 2 to 3 loaves, depending on pan size. Ingredients
2 tsp Baking Soda 1 cup Butter room temp 1 1/2 cup plus 4 Tbsp Granulated Sugar 1 (14.5 oz can) Pumpkin Puree 2 tsp Pumpkin Pie Spice 1 tsp Cinnamon 1/2 tsp Nutmeg 1/2 tsp Ground Ginger 2 Eggs 1/4 cup Canola Oil 1/4 tsp Vanilla 4 cups Flour 1 tsp Baking Powder 1/2 tsp Salt Toasted Flax Seed and Walnuts w/ Sugar (if desired) InstructionsIn large mixing bowl, combine sour cream and baking soda and set aside. With a mixer, cream butter and sugar together until fluffy. Add sour cream mixture to the creamed butter on medium speed, incorporating ingredients completely. In a medium mixing bowl, combine pumpkin puree, cinnamon, nutmeg, ginger, and pumpkin pie spice, whisk to combine. To the pumpkin mixture whisk in the eggs one at a time, then add the oil and vanilla. The batter will look a little watery and that is fine. Now add the pumpkin mixture to the creamed butter mixture until well blended.Sift flour, baking powder and salt together and then slowly add into the pumpkin mixture. Start mixer on low and then increase as flour is added. Preheat your oven to 350 degrees. Spray your loaf pans with vegetable spray, then pour about 1/4 cup of sugar into each pan if desired. Rotate until the sides of the pans are covered in sugar. Remove the excess. Pour the batter into loaf pans. Bake for 35 to 45 minutes until risen and golden brown. Near the end of baking insert a knife into loaf and remove; if the knife comes out clean, your bread is done. Remove and let cool on racks for 45 minutes. Free the pumpkin bread loaves by turning upside down and shaking. Serve immediately or wrap in plastic and store in the freezer. Recipe by: Amy J. 21 oz. can cherry pie filling 18 1/2 oz. package devil’s food cake mix (without pudding) 1 c. chopped pecans 1/2 c. (1 stick) butter, melted Chocolate shavings (optional, I didn’t use these) Spread drained pineapple in a lightly greased 13×9 inch pan. Add pie filling, spreading gently. Sprinkle dry cake mix over pie filling. Sprinkle with pecans. Combine butter and reserved pineapple liquid. Drizzle on cake mixture. Bake at 325 for 45 to 50 minutes. From my personal experience, chili powder, cinnamon, and even basil can lose their potency only after a few months! Just like all other food items, spices expire, altho you won't get sick from expired spices but you will notice they lose there colors/flavor and potency. The easiest way to do this is to shop DOLLAR TREE as they have a good selection of spices. They carry a wide variety of $1 spices to help you restock. They have everything from your basic spices like salt, pepper, basil, garlic, and chili powder to your more exotic and seasonal spices such as pink Himalayan salt, rosemary, and even pumpkin spice plus it won't cost you a fortune to refresh your spices once in awhile.
The DOLLARSTORE/BLOG has some DIY Spice Blends along with suggestions for organizing your spices.
Pumpkin Pie Spice:
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon allspice
1/8 teaspoon nutmeg
This equals to 1 teaspoon pumpkin pie spice
Apple Pie Spice:
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon allspice
1/8 teaspoon cardamom
This equals to 1 teaspoon apple pie spice.
Make more to have on hand.
Store in an airtight container.
Taco Seasoning:
3 tablespoons chili powder
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 teaspoon dried oregano
1 teaspoon paprika
1 tablespoon cumin
2 teaspoons regular salt or sea salt
1 1/2 teaspoons black pepper
1/4 teaspoon cayenne pepper or red pepper flakes
Whisk together and store in airtight container. This makes about 1/2 cup.
Note: I use about 2 tablespoons per pound of meat but you can also use it according to taste.
Poultry Seasoning :
1 tablespoon ground sage
1 tablespoon ground thyme
1 tablespoon ground marjoram
1 teaspoon dried ground rosemary
1 teaspoon celery seeds
1/2 teaspoon ground nutmeg
1/2 teaspoon black pepper
1/8 teaspoon onion powder, (optional)
Mix all ingredients together and store in an air-tight container.
Makes about 1/3 cup poultry seasoning.
Cajun Seasoning:

1/2 teaspoon red pepper flakes or cayenne (You can add more if you like it hot)

YIELD: 12-24 cookies
INGREDIENTS:
1 cup powdered sugar
2 teaspoons milk
2 teaspoons light corn syrup
1⁄4 teaspoon vanilla extract or 1/4 teaspoon almond extract
food coloring
DIRECTIONS:
-Stir the powdered sugar and the milk until smooth.
-Beat in corn syrup and vanilla until icing is smooth and glossy.
-If it's too thick, add more corn syrup.
-Divide icing into separate bowls and stir in food coloring as desired.
-You can dip the cookies, paint them with a paint brush or spread them using a knife or the back of a spoon.
Note: Sugar cookie icing pretty much sets up in about 45 mins to an hour. But make certain its dry before they stack, thicker icing could potentially take longer.

Halloween Rice Krispies Treat For The Kids To Create and Enjoy! Ingredients
3 tablespoons unsalted butter 10 ounces mini Marshmallows 1/2 cup creamy Peanut Butter 1/4 teaspoon Pumpkin Pie Spice 12 drops red food coloring , may vary depending type 4 drops yellow food coloring , may vary depending type 12 Tootsie Roll Midgees or Pretzel Sticks Optional - Frosting Colors for Decorating In a medium sauce pan melt butter and peanut butter over medium heat for 3 minutes stirring with a wooden spoon. Add marshmallows and food coloring. Continue to stir until marshmallows are melted and sticky like glue. A wooden spoon is important here because the mixture will stick less to this surface. Remove from heat and stir in Rice Krispies cereal. Blend well. Although I highly recommend wearing powder-free latex gloves, you can also use wax paper to mold the warm mixture into round balls. Push a tootsie roll into the top for the stem. The heat from the pumpkin will create a malleable material so the tootsie roll can be gently bent. Ridges in the tootsie roll create a natural and woody effect. Allow pumpkins to cool completely, then decorate with frosting for stem leaf and face designs if desired. |

Layer 1
Bake cookie mix with ½ cup pecans together. Press into a sprayed 9x9 OR 9x13 pan. Bake for 15 minutes at 375 degrees, then remove and let cool.
NOTE: If you are using a 9x13 pan, or would like a thicker crust, add an additional ½ cup flour, ¼ cup butter and ¼ cup chopped pecans.
Layer 2
Blend cream cheese, powdered sugar and pumpkin pie spice in a mixing bowl. Fold in 1 cup of the whipped topping, spread over cooled crust.
Layer 3
Mix milk, pudding mix, pumpkin spice together and once again fold in 1 cup whipped topping until smooth. Spread over top of layer 2.
Layer 4
Spread remaining 1 cup of whipped topping and sprinkle pecans.

For The Cake Mix Cookie:
1 box dry cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon flavored extract {peppermint etc...}
For the Icing:
1 stick butter, room temperature
3 cups powdered sugar
2 teaspoons flavored extract {peppermint etc...}
1-2 teaspoons milk
For Glaze and Topping
5 cups (20 ounces) confectioners' sugar
7 - 9 tablespoons whole milk
2 tablespoons corn syrup
1 teaspoon flavored extract {peppermint in this case}
1/2 teaspoon salt
1/2 cup crushed hard candies, {peppermints also in this case}
To make the Glaze or Topping, whisk together the confectioners' sugar, corn syrup, flavored extract, and 6 tablespoons of the milk until a glaze forms. You can add one more tablespoon of milk to thin if necessary (I did). Transfer 1 cup of the glaze to another bowl and whisk in the cocoa and 1-2 more tablespoons of the milk.

TIP: Purchase a rectangle-shaped package of ice cream for the easiest cutting. I personally love the Pillsbury Ornage flavoring or you can use the Duncan Hines orange cake mix also. the following recipe will create square cookie sandwiches... or you can create the ones in the pic also ... just adjust step 3 Ingredients:
1/4 cup shortening 1/4 cup butter, softened 1 large Egg Vanilla Ice Cream, softened (2 tablespoons per sandwich)
1 - Position an oven rack in the center and preheat oven to 350F degrees. Line cookie sheets with parchment paper or lightly grease them.
2 - In a large bowl, beat together the dry cake mix, shortening, butter, and eggs with an electric mixer on medium-low speed until well blended, about 1 minute.
3- Between waxed paper, roll one part into a 10x6-in. rectangle. Remove one piece of waxed paper and invert dough onto a ungreased baking sheet. Score the dough into eight square pieces, each 3x2-1/2 in. Repeat with remaining dough
4 - Bake at 350° for 8-10 minutes or until puffed.
5 - Remove from the oven and cool on the cookie sheets for 1 minute before transferring them to wire racks to cool completely.
Repeat with remaining cookie dough, being sure that cookie sheets are cool before using them again.
Assembly:
Place 2 cookies for each ice cream sandwich you want to make in the freezer to harden.
Let the ice cream sit at room temperature for 10-15 minutes to soften.
Turn one cookie over and place one to two little scoops of the ice cream (about 2 tablespoonfuls) onto the bottom of the cookie.
Place another cookie (right-side-up) on top of the ice cream and squeeze them together a bit to push the ice cream to the edges.
Eat immediately or wrap in plastic wrap and place in freezer bag to enjoy later.
