Actually the weather has been very nice here in Mn for January { 30's and 40's and hardly any snow } and spring fever is kicking in fast! :: INGREDIENTS ::
1 box yellow cake mix
1 stick (1/2 cup) butter (softened to room temperature)
1 can lemon pie filling
:: DIRECTIONS ::
- Preheat oven to 350 F
- Mix the cake mix and butter together until completely incorporated and crumbly.
- Press all but about 1/2 a cup into the bottom of a 9x13 baking dish (use a smaller dish if you prefer thicker bars).
- Spoon the lemon pie filling over the top, then spread it out evenly.
- Sprinkle the remaining 1/2 cup or so of crumbly mixture over the top and bake at 350F for about 25 minutes.
- Cool slightly, cut into bars, enjoy. Refrigerate the leftovers (assuming there are leftovers).
